You form and bake the loaf on a piece of heavy-duty foil on a sheet pan. This also could be made in a loaf pan. It is important to pour off any accumulated fat after cooking and before putting the tomato-sauce topping on for the final 15 minutes of cooking. It's hard to know for sure if this actually was The King's favorite meatloaf, but this recipe made a generous and classic-tasting meatloaf that any meat lover is certain to like.
MEATLOAF
2 pounds ground beef
1 medium onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
3 eggs, lightly beaten
1 package (4 ounces) saltine crackers, crushed
three 8-ounce cans tomato sauce (divided use)
1/2 cup ketchup
Preheat the oven to 350 degrees. Gently combine ground beef, onion, green pepper, garlic, eggs, saltines and 1 can of the tomato sauce. Shape into loaf and bake for 45 minutes.
Mix the remaining tomato sauce and ketchup and pour over loaf. Bake an additional 15 minutes.
Serves 8 to 10
